For dinner last night, I made katsu curry with carrots. (and only carrots, because we had no more potatoes in the house.)


I started by preparing the chicken breast. I first washed the chicken and then coated it in flour, egg white and panko breadcrumbs. Afterwards, I gradually fried them in a pan with olive oil.


Honestly, I really hate frying meat compared to other cooking methods, it's scary. The loud ominous crackling, the grease popping, and the risk of having a severe fire hazard in the house makes me on edge the entire time. Last time I attempted this, the oil actually popped into my eye. This was right after I had cut myself with suspicious rusty metal under the sink before handling raw meat, so it was not the best experience. I ended up getting a tetanus shot the next day. ANYWAYS, this time it actually turned out really well.


The first few turned out to look pretty, anyways....

As the chicken was cooking, I prepared the rice. It still had some water when I took it off, but to me that's better than burning the rice. I boiled the carrots and then added the curry cube. Eventually, I got sick of the process of frying the chicken so they began to look a bit odd looking. Good, but still odd looking. After everything, here is the finished result. Overall it was okay, but I wish I had more vegetables to add.

Dinner - pasta with parm and tomato sauce with breaded chicken, asparagus.
